Thon sauce tartare

This is very quick to make ... for all of you working mothers who want to invite a few dinner friends. Success guaranteed! This should feed 4 guests.

1 tuna steak per person - choose tuna filet, the king of cut that is used for sushi, not the slice with the bone in the middle.

Tartar sauce : 1/2 cup of cornichons (baby gerghins), 1/4 cup of capers and 1/4 cup of shallots. Chop and mix everything with a sharp knife or in a cuisinard.

Serve with polenta : Use 1 cup of quick cooking polenta (corn meal), 4 cups of skim milk  and 1/2 cup whipping cream. Season with 1 bouillon cube (hold the salt). Bring to a boil, pour the polenta in, stir quickly and cook for 5 minutes until it thickens. When it thickened to your liking, take it quickly off the stove.

Sear the tuna on a hot skillet with some olive oil for 30 seconds on each side. Salt with soy sauce.

Serve with the tartar sauce and the polenta.Yes, the polenta is very rich, but you don't serve a lot on each plate. Better taste and less quantity are the guarantee of healthy guests.
